Protein Choco-Banana Baked Oatmeal

Banana bread is one of the most googled words in the food space. Inspired by that absolute classic, this protein choco-banana baked oatmeal is sure to be a household favourite. A lot of the baked oatmeal recipes out there have lots of added sugar, defeating the purpose of a healthy breakfast (I'll take the pancakes instead). This recipe is sweetened only by the bananas and the chocolate chips on top. To bump up the protein without protein powder we are adding egg whites. This will be the healthiest and tastiest version of banana bread ever!
Ingredients
3 ripe bananas
1 2/3 cup milk (any milk product can be used)
2 large eggs
½ cup egg whites
2 tablespoons maple syrup (optional if you prefer it sweeter)
1 teaspoon vanilla extract
2 1/4 cups old-fashioned rolled oats
2 teaspoons baking powder
1/4 teaspoon fine sea salt
¼ cup walnuts
¼ cup dark chocolate chips
Optional toppings:
Milk or yogurt
Maple syrup
Directions
Preheat the oven to 350°F, with the rack set in the middle. Using a paper towel grease your baking pan (9x12 inch) with coconut oil.
In a large bowl, mash the banana, then whisk in the liquid ingredients - milk, eggs, egg whites, maple syrup (if using), and vanilla extract. Mix in the oats, baking powder, sea salt, and walnuts.
Pour the mixture into the baking pan and sprinkle the chocolate chips on top.
Bake for 30-35 minutes or until the center appears almost set. Cool for 5 minutes before serving, it will solidify a bit more during this time and help with serving. It’s delicious on its own or with a splash of milk or yogurt.
Notes
You can use any milk, but cow’s milk is naturally sweeter than most unsweetened nut milks, so you might need to add more maple syrup for the same desired taste.
Leftovers will keep for 3-4 days in the fridge.
