Rooibos Latte Oatmeal

The first time I tried a chai-tea-infused oatmeal, my mind was blown. As the oatmeal cooks in the tea it gets infused with the complex and distinct notes present in tea, then when the milk gets mixed in, it's basically a food latte. Since my first time visiting Cape Town, I've traded in English breakfast for Rooibos, a naturally decaf tea, that only grows in South Africa. I recently decided to try oatmeal infused by rooibos and the result is delightful.
Ingredients
2 cups water
3 rooibos tea bags
1 cup old-fashioned oats
1/2 cup of milk (dairy or non-dairy)
1 teaspoon of vanilla extract
Fine sea salt
Topping suggestions:
Unsweetened coconut flakes
Toasted pecans for topping
Fruit (bananas, blueberries, strawberries all work well)
Drizzle of honey
Directions
Bring the water to a boil in a medium saucepan. Remove from heat, add the tea bags, and steep for 5 minutes. Remove and discard the tea bags.
Return the pan to heat and bring it to a boil again. Once boiling, add in the oatmeal and a pinch of salt, and reduce heat to a gentle simmer over medium-low heat. Cook for 7-10 mins, uncovered, until most of the water is absorbed. Add milk and cook for 3-5 more minutes. Remove from heat and stir in the vanilla extract.
To serve divide the oatmeal and top with the suggested toppings.
