These cookies are perfect for cinnamon lovers! It’s a light, not overly sweet cookie that is super fun to shape. They also happen to be dairy free.

 

Ingredients

3 eggs

1 cup white sugar

¾ neutral oil

3 ½ cups flour

2 teaspoons baking powder

¼ teaspoon salt

1/3 cup cinnamon sugar (1/3 cup sugar and 1.5 tablespoons cinnamon)

 

Directions


  1. Preheat the oven to 375°F (190°C). Combine the eggs, sugar, oil, and blend well.

  2. In a medium bowl, combine the flour, baking powder, and salt. Add the dry ingredients to the wet a bit at a time until the dough comes together. You may use a little less flour than 3 ½ cups.

  3. Divide the dough into 8 balls. Roll each one into a thin pencil shape, cut the dough into 10-15 cm long pieces and then twist into a figure 8. Dip in cinnamon sugar and place on a lined baking tray. Bake for 10-12 minutes.

 
  • Store in a tin for 4-5 days or freeze for 3-4 months to keep them fresh.
