Rooibos Chai White Bean Pudding

5 pantry ingredients and you have the best high-protein, dairy-free chai pudding! It also has no artificial sweeteners as Medjool dates bring the sweetness. This is one of my favourite desserts when I want a little treat while keeping on track with my gym goals!

 

Ingredients

400g can of white beans, drained and rinsed

4-5 Medjool dates, pitted and torn into pieces

2 rooibos chai (or regular chai) tea bags

1 teaspoon vanilla extract

¼ teaspoon table salt

½ teaspoon ground cinnamon

Toppings

Unsweetened shredded coconut

Chocolate chips

Nuts (walnuts, almonds, peanuts, etc.)

 

Directions


  1. Steep 2 rooibos chai tea bags in ½ cup of boiling water for 5 minutes.

  2. Add the white beans, dates, rooibos tea, vanilla extract, salt, and cinnamon to a blender and blend until smooth. Add a bit more water to achieve the desired consistency.

  3. Serve with a sprinkle of cinnamon, and any desired toppings (nuts, coconut, chocolate chips). Refrigerate leftovers, the flavours deepen and get better with time!

 
  • Leftovers keep for 3-4 days in the refrigerator.
