Chicken Apricot Skewers

Proving that there are a million ways to make chicken breast delicious, the pairing of the spicy chicken and sweet apricots has a lovely, charred flavour from the grill. This is a super quick and healthy main that you serve at your next BBQ.  

 

Ingredients

4 chicken breasts, cut into chunks

4 tablespoons olive oil

1 teaspoon turmeric

1 teaspoon paprika

1 teaspoon chili powder

1 teaspoon fine sea salt

½ teaspoon garlic powder

½ teaspoon cinnamon

18 dried apricots

Fruit chutney to serve

 

Directions


  1. In a large bowl mix the olive oil and spices. Add the chicken pieces and toss to cover in the marinade.

  2. Thread the chicken pieces onto skewers with an apricot slice in between every 1-2 pieces of chicken. Let marinate in the fridge for at least 3-4 hours, or overnight for more flavour.

  3. Preheat the grill to high heat. Grease the grill. Place the skewers on the grill and cook for about 10 minutes, turning once, or until the chicken is cooked through.
