Chicken Apricot Skewers
Ingredients
4 chicken breasts, cut into chunks
4 tablespoons olive oil
1 teaspoon turmeric
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon fine sea salt
½ teaspoon garlic powder
½ teaspoon cinnamon
18 dried apricots
Fruit chutney to serve
Directions
In a large bowl mix the olive oil and spices. Add the chicken pieces and toss to cover in the marinade.
Thread the chicken pieces onto skewers with an apricot slice in between every 1-2 pieces of chicken. Let marinate in the fridge for at least 3-4 hours, or overnight for more flavour.
Preheat the grill to high heat. Grease the grill. Place the skewers on the grill and cook for about 10 minutes, turning once, or until the chicken is cooked through.
