This fig and feta stuffed chicken is the perfect balance of sweet, salty, and savory. Ingredients

4 chicken breasts (approx. 650g)

3-4 figs, thinly sliced

100g feta cheese

1 teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon garlic powder

¾ teaspoon fine sea salt

1 tablespoons olive oil

Freshly ground pepper

 

Directions


  1. Pound the chicken to an even thickness and cut a slit ¾ of the way through the chicken lengthwise to create an envelope for the filing. Stuff each chicken breast with fig slices and feta.

  2. Combine the paprika, garlic powder, dried oregano, and salt in a small bowl. Season the outside of the chicken breast with the spice mix.

  3. Heat 1 tablespoon olive oil in a large skillet over medium heat. Cook the chicken for 3 minutes, flip it once a nice crust has formed and then cover the pan so that it can cook through, another 4-5 minutes. Cook until the chicken reaches 165˚F (75˚C). Let rest for 5 minutes before serving.
