A not-so-boring turkey sandwich is all about unique garnishes. Pickled fennel is the star of the sandwich, adding a nice bite, delicious tang, and slight sweetness. This is the perfect quick lunch to make to bring to work when served cold or make it even tastier served warm with melted cheese.

 

Ingredients

4-6 slices of smoked turkey or chicken

2-3 slices of pickled fennel

20-30g of cheddar cheese

Greens such as baby spinach or lettuce

Dijon mustard

2 slices of bread

 

Directions


  1. Slather the bread with a thin layer of Dijon mustard and layer the smoked turkey, cheese, pickled fennel, and greens between two slices of bread. Eat cold or serve warm by using a panini press or pan frying it. 

 
  • You can prepare the cold version of the sandwich for a make-ahead lunch the night before, but be sure to dry off the pickled fennel and the washed greens so it doesn’t get soggy.
