This homemade granola, inspired by poppy seed lemon loaves, combines the zesty freshness of lemon, the delightful crunch of poppy seeds, and the natural sweetness of dried blueberries. It's a perfect blend of flavors and textures to enjoy topped on yogurt or eaten by the handfuls as a tasty treat.

 

Ingredients

2 cups old-fashioned oats

Zest from one lemon

1 tablespoon poppy seeds

1/4 teaspoon salt

1/4 cup slivered almonds

1/4 cup lemon juice

2 tablespoons coconut oil, melted

1/4 cup honey

1/4 teaspoon almond extract

1/4 dried blueberries

 

Directions


  1. Preheat the oven to 350F. In a medium bowl, combine the oats, lemon zest, poppy seeds, salt, and almonds. In a small bowl combine the lemon juice, coconut oil, honey, and almond extract. Once mixed, add the wet ingredients to the dry and mix to combine.

  2. Bake for 15 to 18 minutes, mixing halfway. Once cooled, add in the dried blueberries.
